Almond Milk Recipe

A few months ago, my husband and I drank the best almond milk, and we have been hooked ever since! It was not purchased from the shelves of a market, or served to us at a trendy organic café. It was homemade by us after discovering the delicious Sweet Vanilla Almond Milk recipe in The Plantpower Way by world-renowned vegan ultra-distance athlete Rich Roll and his chef wife Julie Piatt. This recipe is slightly altered from the one in the book because that is the fun of making your own, right? You follow the recipe for the basic instruction and then adjust ingredients to taste.

Over the last year or so, we have tried every dairy free milk /creamer option out there. Feeling unsatisfied with the undesirable ingredients or lack of flavor, we began searching for alternative options. We never realized how easy and fun it was to make your own almond milk until we tried it. Why settle for mass produced commercial almond milk filled with preservatives, when you can make your own creamy, sweet, and fresh milk at home, that is:

  • Dairy-Free
  • Soy-Free
  • Carageenan-Free
  • Vegan
  • GMO-Free
  • No preservatives

This vanilla almond milk recipe provides healthy fats and nutrients like fiber protein, magnesium, phosphorus, and riboflavin. Detoxifying Vitamin E keeps your bones strong, while Vitamin D helps your body absorb calcium. Almonds reduce blood pressure, lower cholesterol, and contain monosaturated fats that create a feeling of fullness. Fresh aromatic and sweet vanilla bean pods provide vitamins such as niacin, pantothenic acid, thiamin, riboflavin and vitamin B-6. These vitamins help in enzyme synthesis, nervous system function and regulating body metabolism. Sweet dates promote digestive health, relieve constipation, and boost brain and heart health.

INGREDIENTS

Serves 8 / Note: This recipe makes enough milk to fill one 1L (33.75 oz) milk bottle.

  • 1 cup raw organic almonds
  • 2 medjool dates
  • 4 cups filtered water
  • 2-3” piece vanilla bean or 1 tsp of vanilla extract
  • 2 pinches Celtic Sea Salt
  • 2 pinches cinnamon (optional)
  • 1 nut milk bag
  • 1 glass milk jar
    • Note: Since you will be shaking this before each use, I recommend using a milk jar with a secure screw-on lid (like the above suggested bottle, or similar).

PREPARATION

  1. Soak the almonds in filtered water for 8 -12 hours
  2. Soak the dates in filtered water for 2 hours (in a separate bowl from the almonds)
  3. Drain the water from the almonds and place them in the blender
  4. Drain the water from the dates and place them in the blender
  5. Add 4 cups filtered water
  6. Blend on high for 1 minute
  7. Slice open the vanilla bean lengthwise and scrape out the seeds. Add the seeds to the mixture.
  8. Add 2 pinches of Celtic sea salt
  9. Add 2 pinches of cinnamon (optional)
  10. Blend on high for 1 minute
  11. Pour and strain through the nut milk bag into a large bowl
  12. Pour the contents of the bowl into a measuring cup with a spout to enable easy and clean pouring into the milk bottle
  13. Save the delicious almond pulp and freeze for later use in Almond Pulp Cookies (recipe coming soon)
