SUPERFOOD OATMEAL WITH DATES AND BLUEBERRIES

If you’ve never had COLD oatmeal before, you’re in for a treat that’s like a time capsule! It has all the nostalgic vibes of cold cereal and milk, but with fresh fruits, hearty high fiber oatmeal, and dairy-free plant milk. It satiates your sweet tooth without all the artificial sweeteners and additives.

It’s a great option for a quick healthy breakfast that satisfies your hunger, tastes great, and gives your body a boost of nutrients to start the day off right. Rich in antioxidants, magnesium, and heart healthy fats, this is a plant-based breakfast that tastes out of this world!

SUPERFOOD OATMEAL WITH DATES AND BLUEBERRIES RECIPE

STEP 1: Mash the banana in your bowl. This will be the base that creates a creamy oatmeal consistency later.

STEP 2: Mix in the oatmeal and add the cold milk. Mix together, cover, and let it sit for at least 1/2 hour at room temperature (or in the fridge if you like it even colder). I used our homemade Almond Milk (plant-based, dairy free) in this recipe, but any milk you like would be delicious!

If you prefer to prepare this the night before, you can let the banana, oats, and almond milk sit overnight in the fridge. That way it’s ready for a quick healthy breakfast and all you need to do is add those yummy toppings. (Note: You might want to add a little more almond milk if it has thickened too much overnight).

STEP 3: Top with hemp seeds, pumpkin seeds, fresh blueberries, dates, and a little cinnamon. You can also add a drizzle of granola for some crunch.

INGREDIENTS (Serves 1)

– 1 banana

– 3/4 cup Rolled Oats (rich in protein and fiber). It’s important to use Rolled Oats because they work better with cold milk since they require less prep time/cooking. I like these Organic Gluten Free Sprouted Rolled Oats.

– 1 cup Almond Milk

– 2-3 Dates (I like these Organic Premium Medjool Dates because they’re always plump and moist).

– Fresh Blueberries (rich in antioxidants) 

– Shelled Hemp Seeds (rich in protein, omegas 3 & 6, potassium, magnesium)

– Pumpkin Seeds / Pepitas (rich in protein, fiber and healthy fats) 

– Granola

– Cinnamon
