WATERMELON ENDIVE & FETA FLOWER SALAD BITES

It’s watermelon season, and these scrumptious watermelon filled endive leaves might be my new summer obsession!

Plant-based Mediterranean flavors load the petals of these Watermelon Endive & Feta Flower Salad Bites. These beautiful botanical bites are a sweet and savory summer appetizer or side. If you’re looking for a pretty presentation for gatherings, you found it! They can also be easily scaled up to a large serving platter for big parties.

Endive leaves make the perfect crispy holder for juicy watermelon strips, fresh cucumber, and savory red onion. You will only be using small finger size watermelon strips for this recipe. So rest assured, you will have plenty of watermelon leftover to still enjoy.

They’re colorful, refreshing, sweet, savory, juicy, crunchy, and…addicting!

WATERMELON ENDIVE FETA FLOWER SALAD RECIPE

INGREDIENTS:

  • Watermelon
  • Endive 
  • Cucumber 
  • Red Onion 
  • Fresh Basil
  • Pistachios
  • Blackberries
  • Lime
  • Salt
  • Feta Cheese
  • Balsamic Glaze

PREPARATION (serves 2-4)

STEP 1: Arrange your Endive leaves in a circular flower shape around your plate. I used the Red Endive leaves from this Endive 3-Pack. There’s usually 1 head of Red Endive and 2 heads of Green Endive in the package. You can also get this at Trader Joe’s.

STEP 2: Cut small watermelon strips (approximately finger size) to fit inside each leaf. Place 1 strip inside each leaf. If your Endive leaves are small or need more support, double up with 2 leaves.

STEP 3: Thinly slice fresh cucumber strips and add one inside each leaf.

STEP 4: Thinly slice red onion strips and add one inside each leaf.

STEP 5: Add blackberries in the middle of the plate to create the center of the flower. You can also use raspberries or blueberries if you want this to be more colorful.

STEP 6: Chop fresh basil and pistachios. Combine them and drizzle the mixture over the flower petals.

STEP 7: Sprinkle some fresh lime juice, sea salt, and crumbled feta over the flower petals. I used the plant-based / dairy-free Follow Your Heart Feta Crumbles, but use whatever feta you like.

STEP 8: Drizzle thick, tangy and sweet Balsamic Glaze over the top for extra flavor and color contrast.
